A beautiful Monday a few weeks ago called for a drive in our convertible to a destination with outside seating.  We found our “oasis” along with families who had enjoyed the White Like Creek Trail by the Oasis Diner.

We have fond memories of the Oasis Diner with our kids when it was located on the far west side of Plainfield. The Oasis Diner, manufactured by Mountain View Diners in Signac, NJ, was shipped via railroad to the east side of Plainfield, Indiana in 1954. I was one of many who lined HWY 40 – Historic National Road when they moved to their new location by Plainfield Parks White Lick Creek Trail.

Quaker Burgers we’re our selection with fresh not frozen house made patties. As we waited for our order, Chef Pedro Caperone brought to the counter his weekly specials to photograph for Social Media. When he placed the Avocado Toast, my eye captured the feast in front of us. Followed by his creation of Shrimp and Crab Pita with fresh seafood. After photos were taken, Pedro brought them over to us to devour. He told us the owners encourage his South Carolina culinary background to create using the freshest ingredients to defer from the normal diner food for weekly specials   Both were delicious with each complementing the distinctive flavors. It’s easy to get to. The atmosphere, simple and down home. Never to crowded and good service. I like to keep my money in Hendricks County.

Fill glass almost to rim with Margarita mix
